Quick and Easy Fenugreek Lentils/Methi Dal

Dal is a staple in many regions of India. Many people in the US refer to them as Lentils even though they are a little different. There are many combinations and variations of this. What I have here is the basic version of dal I make on a weeknight :) And since leafy vegetables are pretty healthy, I try to add something in whenever I make one. this is the Fenugreek/Methi/Menthi Koora Dal version

Ingredients:

1 cup Chopped Fenugreek Leaves/Methi/Menthi Koora
1 cup Tuvar Dal
4 Dried Red Chillies
1 sprig Curry leaves
4 Garlic cloves
1 tsp Oil
salt
red chilli powder
lime size ball of tamarind

Pressure Cooker needed.

Serves: 5 people

Process:

Soak the tamarind in some water.

Use the bowl that you will pressure cook the dal. Wash the dal with water and drain the water.Measure 2-3 cups of water and add it to the dal. Now add the leafy greens, turmeric, garlic cloves and 1 tsp oil to it. Pressure cook until it whistles 3/4 times. Wait until the cooker is cold (about 10-15 minutes) and remove the dal from it. (I dont drain the water because i like a more running consistency.And also, I dont want to lose out on any nutrients..)

Now, in a sauce pan and put some oil in it for tempering. Prepare seasoning as explained here. Also add curry leaves and red chillies to the hot oil. When the seasoning is ready, add the dal into the sauce pan and stir. Now, extract the juice from the tamarind you have soaked earlier and add it to the dal. Add salt and chilli powder as per taste. Let it cook for about 5 minutes and turn off the heat.

Serve hot with Chapathi/rice. Enjoy !

I never tried adding Methi to Dal soups. Thats a good idea, and I wonder how it would taste, Will try it out sometime, Thanks for sharing the idea! Looks delicious.
