Hyderabadi Style Egg Kurma


Ingredients:

4 Eggs (hard boiled)
1 Large Red Onion (chopped finely)
2 Green chillies (slit length-wise)
1 tsp Turmeric powder
1 Tbsp Sesame Seeds (roasted, powdered)
1 Tbsp Poppy Seeds (Gasa gasaalu) (also roasted and powdered)
1 Tbsp Dry coconut powder
2 Tbsp Curd/Yoghurt (preferably a little sour)
1 Medium Tomato (finely chopped)
1/2 cup green peas (optional)
1 tsp Coriander Powder
3 cloves
2 tsp Red Chilli powder
1 Tbsp oil
Salt to taste
Process:
---------
In a wide, heavy bottomed pan add oil and heat it. Add the cloves then add onions, turmeric and green chillies. Saute them and add tomato after 5 minutes. Stir. Dont let the mixture stick to the bottom of the pan. Add salt and red chilli powder. Let the onion and tomato cook well. Make about 1 inch cuts on the boiled eggs. This will allow the spices to get into it a little bit. Add the eggs and mix. Add coriander powder and mix. Let it all cook well. Meanwhile add the sesame powder, poppy seeds powder and dry coconut powder to the curd and mix well. you may add about 1/2 cup of water. Add the curd mixture to the pan. Add the peas if you are using them. Stir and let it simmer(about 10-15 mins) until the desired consistency is reached and oil starts to ooze out on top. Turn off the heat.

Serve with Chapathi/Nan or Rice. Serves 4. Enjoy !
