3 Girls and a Fresh Fruit Layer Cake


This is a story of 3 friends from 3 countries of 3 religions speaking 3 different languages.. One of them is moving to a different state, so the three friends decided to hang out at another one's house one last time before the move ! They laughed and fought and cried and played.. A Movie, A Pizza (ok there were actually 3 pizzas too) and a Cake.. were part of the celebration that night..
I present below the recipe for the cake and the icing.. that turned out so great.. ! Its easy and a crowd pleaser at any occasion.


Fresh Fruit Layer Cake

Ingredients:
------------

For Cake :
------------
Cake - Duncan Hines Cake Mix (Any flavor of your choice. We had lemon for this one)

For Icing:
------------
1 Large Cool Whip Pack
1 Box Jello Instant Vanilla Pudding Mix (Dont make pudding. We just need the powder)
1 Can Crushed Pineapple (drain all liquid)

Fresh Fruits for decoration and filling-
We used -
Fresh strawberries
Fresh blueberries

Process:
---------
Bake the 2 cakes as per instructions on the box.
Let it cool. Prepare the cakes for decoration

Thanks to my co-worker who shared this awesome recipe with me...Its very similar to the fresh cream icing.. that I love.. and its much easier to make than the fresh cream icing.. Make the icing by folding the pudding mix and drained crushed pineapple into the coolwhip.

On the top surface of bottom cake, spead some icing and decorate with thinly sliced strawberries. Place the second cake on top of it and cover the whole cake with icing. After its well covered, decorate with strawberries and blueberries as per your liking. When done, let it sit in the fridge for a couple of hours before serving. Enjoy !

Variations -
----------------
Can add some crushed fresh oranges or grated orange peel to the cake batter for a taste orange cake. You can use Kiwis, Mangoes or any other kind of berries for decoration too. You can never go wrong with these. The following is the cake with some kiwis.

I can understand how great it will be if u have someone around when u r away frm parents. Even I have 3 friends here(total 4) and having a good time. you would definitely miss ur friend. And it is a beautiful and lovely cake.
