Yummy Zucchini Nut Bread

Last month, I happened to visit a farmers' market where one of the vendors was selling some different kinds of bread..All of them seemed so nice.. Banana Nut Bread(which is my favorite), Zucchini Bread, Monkey Bread etc., I have made the Banana Nut bread many many times, so I decided I'll have some Zucchini bread.. The idea of a vegetable in a sweet bread seemed very interesting.. I tried some Monkey bread too.. which I believe got its name because its so easy to pull apart even a monkey could do it :)

Few days ago, a friend had given me some from zucchini from the garden and I knew instantly what I wanted to do with it.. I looked up online.. read a few dozen recipes, and tried out this combination.. ! I present to you my Zucchini Bread :)

Ingredients:

3 Eggs

3 Cups of All Purpose Flour (Maida)
1 Cup of Vegetable Oil
2.5 Cups of Zucchini
3/4 cup of Chopped Walnuts(We are big nut fans in my house.. you can skip this or pick something else you like.)
1.5 Cups of Sugar( depending on your liking)
2 tsp Pure Vanilla Extract
2 tsp Apple Pie spice (Its just Cinnamon + Nutmeg + Allspice)
Baking Soda
Baking Powder

Use 2 (8X4) loaf pans for these ingredients. If using different sizes, adjust accordingly. This bread doesnt rise a whole lot and its quite dense and moist.

Process:

Peel the skin and discard it. Then grate the zucchini. Squeeze and discard the excess water.

Preheat the oven to 325 degrees Fahrenheit.

Beat the eggs until frothy. Add the sugar.I like my desserts to not be too sweet, this is about right for me. I could have 1.25 cups too. If you like extra sweetness in general, you could go with 2 cups of sugar. Add all the other ingredients and then mix it well.

Grease the pans (I use PAM Nonstick for Baking), and flour lightly. Divide the batter accordingly and bake on 325F for about 60-70 minutes. Check if its done with the usual toothpick test. Poke it in the center of the bread and it should come out dry. If not, continue for a few more minutes until done. This bread is pretty dense and doesnt rise a whole lot. Its very moist too.

My family loves this bread a lot. I am sure yours will too..Enjoy !

Seriously what does it taste like? I have not made zucchini bread/cake/brownie varieties before. I am curious about how it would taste...

Divya : Its very similar to the Banana Nut Bread.. but with some zucchini flavor. IT has a tinge of cinnamon,nutmeg,all spice flavor too. My version is not too sweeet.. If you are a sweet fan, you could use extra sugar.. but I think that might overwhelm the mild flavor of zucchini. Try it.. you wont be disappointed.. i hope.. Let me know how you like it..

A bread with zucchini, I heard a lot about this but never gave it a try as I am not sure how tastes. Your bread is looking absolutely perfect.
