When you find something unexpected, thought it might be worth trying.. and after tasting it, feel like why you put off making this for so long.. Its an awesome feeling.. of having discovered something easy, yummy and healthy too. I picked up these free recipe cards from my local grocery store few months ago.. and wanted to try one specific recipe in the stack.. Have been putting it off due to hectic schedule these days.. Today ultimately, I decided to give it a whip.. and Wa..lah.. here it is.. I have changed some ingredients and some proportions as per my liking..
Ingredients:
1 Cup Rolled Oats
1/2 Cup Flax seed meal (groung flax seed)
1 Cup Crushed Graham crackers (I used low-fat honey graham crackers)
1/2 cup Golden Raisins
1/2 Cup Dried Roasted Sunflower seeds
1/4 cup butter
3.5 cups fat free mini marshmallows
Process:
In a large saucepan, melt the butter over low heat. Add the marshmallows and stir continuously until melted and the mixture is smooth(about 4-5 minutes) Stir in Oats, graham crumbs, raisins, sunflower seeds and flax seed until thoroughly mixed. The mixture gets all sticky and starts to form like a lump. Pour it into a greased shallow pan. And press it with a metal spatula or hand. After about 5-10 minutes cut it into 2 X 2 inch squares(makes about 24 depending on how thick of a layer you have). Let it cool completely. Yummy.. tasty.. healthy flax n oat burfi is ready.. Its awesome for a quick snack for little ones after a long day at school.. Enjoy !

Yummy n Easy Spicy Oats soup |
I wish I were an oatmeal liker.. But sadly I just dont enjoy it that much. But, with the desire of wanting to eat more oats because they are so healthy, I decided to try spicing it up a bit.. ! I am really happy with the results, and will make this very often.
Ingredients:
2 Large tomatoes(chopped)
1 Cup Rolled Oats (I use the old fashioned ones.. which are whole pieces not broken)
1 Cup Green peas
1/2 cup Green onion (chopped roughly)
1 Tbsp Garlic (minced)
2 tsp oil for tempering
1 Cup Organic Vegetable broth (optional - but adds the extra nutrition)
salt as per taste
Black pepper powder as per taste
water as per desired consistency. (I like the soup a little thicker and not too dilute)
Process:
In a sauce pan, heat the oil, add garlic, green onion, oats and saute for a few minutes. Add chopped tomatoes and saute some more. When the tomatoes start to ooze out juice and cook, and broth, let it simmer for about 5 minutes. Add green peas, Add about 2-3 cups of water and let it simmer until the tomatoes are all cooked. (about 10 minutes) Add salt, black pepper as per your liking and let it reduce to desired consistency.
Serve hot ! Was really yummy and perfect on the snowy wednesday evening.. ! My son loved it too.. I was happy I liked this, and could incorporate more oats into my daily diet in a tasty way.. My mind is bursting with lot more ideas.. will post them as I try them :) Meanwhile, I hope you enjoy this !

Uma's Crazy But Yummy Dosa - HatsOff |
This morning I woke up and felt like eating dosa.. Didnt have any batter ready... But, thought I could try an instant one.. I went around looking at some of the recipes and found this.. ! Seemed healthy and yummy... And got to work right away.. and turned out great.. !
Ingredients:
Same as Uma's recipe here ...
I added a pinch of Baking Soda
some Carom seeds (oma/ajwain)
Process:
Follow the same instructions as in Uma's recipe, just add the baking soda and ajwain seeds. Make it running consistency and spread quickly on a hot non-stick pan. We ate these delicious dosas with Curry Leaves powder (karivepaku podi) and some hot pickle.

Yummy Nutritious Soy Carrot n Peas Fried Rice |
Another weekday quick fix, thats appealing to all senses.. and nutritious too..
Ingredients:
3 Cups Basmati Rice
1 Cup soy chunks
1 Cup green peas(fresh or frozen)
3 carrots (big ones, grated)
1 Tbsp Oil/butter for tempering
4-5 bay leaves
3-4 cloves
3-4 Green chillies (slit length-wise)
2 Tbsp Ginger+garlic paste
2 tsp Shahjeera (Caraway seeds)
4.5 cups of water (to cook rice 1:1.5 ratio)
Salt per taste
Process:
Wash and soak the rice. In a wide pan, heat the oil. Add the bay leaves, cloves and saute. Add caraway seeds, ginger+garlic paste, green chillies and saute again for a few minutes until the aroma of the paste comes out. Add carrot, peas, soy chunks and saute for about 5 minutes. Add salt. Now, drain all water from rice and add the rice.
Mix everything well, carefully. Dump the mixture into the rice cooker and add enough water (1 cup rice : 1.5 cups water for basmati) and cook.
When done, Serve hot as is or with some raitha on the side. It was a yummy, nutritious meal.

Whether its for the kids when you are going out for a shopping trip.. or for you as a quick mid-afternoon snack at work..just before going to the gym, or a quick breakfast, when you dont have time to make a proper one, grab n go snacks..come in handy for the people who are always.. running around.... Store bought snacks are OK (cereal bars, muffins, potato chips etc.,) But most of them are loaded with sugar/ fat/ sodium.. So, I thought we should have something on those lines for the theme this round..
Anything from a quick bran muffin, oat meal cookies to Cereal bars/ energy bars, nut balls or lentil laddus..any quick snack treats that would provide some relief to hunger with some much needed energy.. Its important they must be healthy.. (not loaded with sugar/fat/sodium ) and Something that we can quickly Grab n Go..wherever..So, great your minds thinking.. about some yummy.. creative.. healthy combinations of grab and go snacks..
