Last night, I got back from work and wanted to make something quick and easy for dinner. I had many red and green tomatoes from my garden and decided to make this Yummy Tomato Rice.

Ingredients:

4 Cups Chopped Tomatoes (use juicy, flavored ones, you can use red ones or add green too)
4 Cups Basmati Rice
1 Cup Green peas
2 Tbsp Ginger + Garlic Paste
2 Tbsp Sambhar Powder
1 tsp Caraway /Shahjeera/Black Jeera
4 Cloves
2 Cardamom
1 Medium Red Onion(thinly sliced)
Chilli powder as needed
Salt as needed
Cilantro for garnish
Process:

Wash and soak the Basmati rice.
In a large pan/pressure cooker/pressure pan add some oil, when its hot, add the cloves, cardamom,shahjeera,ginger garlic paste, saute. Then add onions and saute until they are golden brown. Add the tomatoes and the green peas, saute for a few minutes. Add Sambhar powder, salt, chilli powder. Drain the water from the rice and add the wet rice to this. Mix everything and saute for a few minutes. At this point, you can either transfer it to a rice cooker, or if you started with a pressure cooker, continue cooking in it. Add water (1.5 cups water for every 1 cup of rice) and let it cook. If using pressure cooker turn off after 1 whistle blows. Wait until the pressure cooker is cool and then open it. Garnish with chopped cilantro
Sprinkle some ghee and serve hot with any pickle/raita.Enjoy the Yummy Green Peas and Tomato Rice. Serves 3 people generously.
