Lately, I have been interested in Vegan cooking.. I am not a vegan per say.. But I have many friends who are strict vegetarians (no eggs), that never eat the cakes.. at parties.. And there is this one little girl who is my son's friend.. who doesnt eat any at all since she is allergic to egg... and to add to all this, its a chef's challenge to come up with great tasting..eggless cakes/breads .. that taste as good or even better than the ones with egg in them. Since they are such a core part of such foods... !! Thanks to lovely Vaishali...that I was introduced to this awesome Vegan Mango Bread .. There are so many things interesting about this.. that I thought I should try it..the very first time I saw the post..First its my favorite fruit "Mango".. Then it uses the miracle food .. "Flax".. which is good to incorporate in our diet anyway...and its eggless.. and looked very moist and fluffy..
So, I first tried making the Eggless/Vegan Whole Wheat Banana Nut Bread a few weeks ago.. that was a hit.. and last night.. with Vaishali's ideas I successfully.. baked a couple of yummy..Mango Bread loaves (ok well one of them is not a loaf shape.. but does it really matter ? I dont care :))) ..
I made a few ingredient modifications to the original recipe as per my liking..
Mango Chocolate Chip bread & Mango Almond Bread
Ingredients:
2 1/4 Cups All Purpose flour (You could use the Whole Wheat pastry flour.. I didnt have it, so I used this)
2 1/2 Cups Mango Pulp (I used the Kesar Mango Pulp)
3/4 cup sugar (I like less sweeter breads.. You can use 1 cup..if you'd like)
3 tbsp Flaxseed Meal
1 tsp Apple Pie Spice (Cinnamon + Nutmeg + Allspice)
1 tsp Baking Soda
1 tsp Baking powder
1/4 tsp salt
4 Tbsp Vegetable Oil
1/2 cup Slivered Almonds (For the Mango Almond Bread - any other nuts would be good too.. cashews, walnuts, pecans..etc.,)
1/4 cup Semisweet chocolate chips (For the Mango chocolate chip bread )
You can add both too..
And a few raisins (for decoration, because my son wanted to put them there :))
Process:
Beat the flax seed meal in oil, then add all other ingredients and mix everything really well. I used an electric hand mixer and my almost 3 yr old son had a lot of fun "making circles" with the batter.. :)
Preheat the oven to 350F degrees. Grease a 9 X 5 loaf pan or an 8 inch square pan and pour the batter in it and bake until its done. May take anywhere from 45 mins to 1 hr 10 mins. It took 1hr 10 mins in my oven. Keep checking after 45 minutes by pricking a toothpick in the center.. it should come out completely dry and clean..
Let the pan sit on the rack for 10 minutes and let the bread cool down completely before slicing.
Both were gone in a few minutes.. !! I'll probably be baking a lot of these from now...You can see I sliced it into many small pieces. About 24 servings.. And if you stop at 1 (which is kind of hard) you would probably take in less than 150 calories.. (as per http://www.calorie-count.com) :) Enjoy !
