OK, I love peppers..of all kinds.. :) There isnt one variety that I dont like. They are low calorie.. delicious and are quite versatile to use in many different ways.Here is one attempt at using them. I make this curry quite frequently and am always in such a hurry .. I never take pictures. Managed to do it few weeks ago.

Ingredients:
5 Potatoes
2 Large Green Bell Peppers (diced about 2 inch pieces)
2 Large Red Bell Peppers (diced about 2 inch pieces)
1/2 cup Green peas
3 Tbsp oil (more than usual of what I use)
Mustard seeds, cumin seeds, urad dal, ginger+garlic paste for tempering
chilli powder to taste
Salt to taste
Process:
I cook my potatoes always in the microwave just because its convenient and fast. So, thats the first thing I do. Meanwhile, in a wide pan, prepare the tempering and add the peppers, saute.. let them cook.. Just enough to not be crunchy..about 7-10 mins We dont want to overcook the peppers for this recipe. Then add the green peas, some salt and chilli powder. mix well. Then add the diced, boiled potatoes, adjust salt, chilli powder as per taste. Stir and cook for another 10 minutes. Add coriander powder, stir and turn off the heat. Serve with Rice / chapathi. Yummy.. !! Enjoy !
