Cutlets/Tikkis are a category of snacks that are often prepared as part of a Chaat dish. Instead of the traditional Alu tikki, I decided to try it with soy, to make it a little more protein-rich.

Ingredients:

2 cups Soy Granules (Nutrela)
2 Potatoes (Cooked - I use microwave)
1 cup of Mixed vegetables (Green peas, Carrot, Green peas, corn etc) - I use the frozen veggies pack
Red Chilli powder
Coriander powder
Some oil for pan fry
Cilantro (finely chopped) - optional
Process:

Cook the Soy Granules as per instructions from the manufacturer. Cook the potatoes and the mixed veggies. I just use the microwave for both. Drain water from soy granules/veggies. Mash the potatoes and add all ingredients. Mix it well. Make into lemon size balls and flatten with 2 hands to make the tikki. Heat a pan and apply some oil to it, and pan fry the tikkis. You could bake them too. Next time, i will bake them and post the temperature and time.
Makes about 15 medium sized tikkis. Serve hot with ketchup. May work as a healthy substitute for the pure potato tikki chaat.
