Coconut Rice

Serves : 2-3 people

Ingredients:

2 cups rice
1 can coconut milk

1/2 grated fresh coconut
peanuts
curry leaves
Red chillies and spices
cashews for garnish
salt

Method:

Cook rice with coconut milk and salt. Measure the coco milk and add water for the remaining amount of liquid.

Heat a wide pan, pour ghee into it, some oil, fry urad dal, red chillies, cashews, peanuts, curry leaves, mustard seeds, cumin seedd. Then add the grated coconut to this mixture. add salt as needed.

After the rice is done, put all of it in this fried mixture and stir it until therice is well mixed in. Yummy coconut rice is ready.

Garnish with cilantro and enjoy !
