Zucchini Egg Burji

Many vegetables, go well with Egg when it is scrambled. This is the Zucchini version.
It is very easy/quick to make and another way to eat the vegetable which my family enjoys !

4 Eggs
2 Zucchini (Skin peeled and cut into small pieces)

1 Red Onion (chopped)
2 tsp Red Chilli Powder/Paprika
2 tsp Coriander powder
1 tsp Ginger garlic paste
1 Tbsp Oil
2 Cloves
Salt to taste

Heat the oil in a pan. Add cloves, ginger garlic paste and the chopped onions to it. Saute until the onions are semi cooked. Add salt and chilli powder..Mix again. Now add the zucchini pieces. Cook until the vegetable is almost done while stirring occasionally. Add the eggs into the pan. I like to scramble the eggs completely, so at this point I add the coriander powder,some more salt,chilli powder as needed and mix really well so that the egg is all broken up into little pieces. Cook some more until the egg is done about 5 minutes. Turn off the heat.

Serves 3-4. Enjoy with any kind of Rice/Chapathi.
