Mooli/Muli Paratha is traditionally made with radish. Well, last night I felt like eating it.. but I didnt have enough radish at home so, I decided I will use cabbage to compensate. Check it out..
Ingredients:
------------
3 Cups Whole Wheat Flour
2 Cups Cabbage (shredded/grated)
1 Cup Radish (shredded/grated)
1 Tbsp Ginger garlic paste
1 tsp Red Chilli Powder
1/2 Cup Water (or a little more as needed)
1/2 bunch cilantro chopped(optional)
4 Green Chillies chopped (optional)
1 tsp Carom Seeds (ajwain) (optional)
Salt to taste
1 Tbsp Oil/Ghee
Process:
--------
Mix all the ingredients and make a stiff dough out of it. Lot of water will ooze out of the radish so, you may need more wheat flour. To avoid the dough becoming too sticky, add some extra wheat flour should and that should take care of it. But as we add more flour, the flavor of the veggies diminishes. So, its best to prepare the dough when you are ready to make the paratha. Once its done, divide it into 10 balls of equal size. Heat the chapathi pan. Pat the dough ball in wheat flour again as you spread the balls into a paratha. Sprinkle some ajwain seeds on top and press them into the paratha. Fry the paratha on the pan while applying oil/ghee as needed.
Serve hot with plain Yoghurt or it even tastes good by itself.
Servings : 10 Enjoy !
