Ingredients:
4 Plantains(Green Bananas)
1 tsp turmeric
3 Tbsp Oil
Salt as needed
Chilli powder as needed
1 Coriander powder
Process:
Peel the skin of the plantains and dice them into 1 inch pieces as in the picture.
Heat up a wide shallow pan, add the oil, add turmeric. Add the plantain pieces. Shallow fry them without any lid, and medium heat..until they are crispy on the outside, soft inside. Be sure to stir frequently to make sure they are browning evenly. All the oil will be completely absorbed and the curry would be really dry. Turn of the heat, sprinkle salt, chilli powder and coriander powder. Its good as a side dish with rice.
Variation: You can also deep fry the plantain pieces. It would be more oily.. I like this shallow fry method better due to the health benefits.. It tastes almost like the deep fried version.
