Ingredients:

2 Cups Rice Vermicilli (I use the Bambino Brand from the indian grocery stores.. but you could pick up something else too )
1 medium onion (chopped finely)
2 green chillies (chopped finely)
6-10 cashew nuts (split)
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp skinned and split urad dal (white lenthils)
2 tsp oil/ghee
salt to taste
water (for each cup of Vermicilli add 2 cups of water)
Method:

Heat a oil/ghee in a sauce pan, add the urad dal and cashew nuts, fry a little until the dal turn to light brown. Now add the cumin and mustard seeds. When they start spluttering, add the chopped green chillies and onion. Let the mixture fry for a couple of minutes. Now add the salt stir again and add 4 cups of water. Cover and let the water boil. Add the vermicilli while stirring it to avoid lumping. Let it cook until the vermicilli is cooked and the water is evaporated. Serve hot.
Serves : 2 people. Enjoy !
