Sometimes there are situations where you have to prepare food in a jiffy.. For me its usually when there are unexpected guests around dinner time.. This is one such curries that could be prepared so quickly..they wont believe you did it :)
Ingredients:

5 Potatoes
2 tomatoes (chopped)
1 onion (chopped)
salt to taste
chilli powder to taste
Process:
----------
First put the potatoes in the microwave on the potato setting. While they are getting cooked, turn on the stove and heat the pan.. while the pan is getting heated up, chop up the onions finely. Once the onion chopping is done, add oil to the pan, put in all the regular spices for seasoning, add the onions and saute. Then chop the tomatoes finely too. As soon as the tomatoes are chopped, add to the pan and stir. Add salt and add chilli powder , add a cup of water and cover and cook on high. Make sure you are stirring every couple of minutes to avoid burning. The potatoes should almost be done now. Remove them from microwave put them in a bowl of cold water and remove the skin. Then dice the potatoes into 1 inch cubes. When they are done, add them to the pan, and cook until the right consistency is reached. Turn off the heat, garnish with cilantro and serve with rice/chapathi.
