This recipe came about in my kitchen when I was trying to make something tasty with Bottle Gourd that would be nice to serve at a party..
Ingredients:
----------------
1 Bottle Gourd
2 tsp Red Chilli powder
1 Onion
3 Cloves
2 Cardomom
1 Tbsp Ginger Garlic paste
1 Tbsp Sesame Powder
1 Tbsp Peanut/Groundnut Powder
2 tsp Dry Coconut Powder
3 Tbsp Curd/Plain yoghurt (little bit sour one would be great !)
2 Tbsp Oil
Salt to taste
Cilantro
Process:
------------
Peel the skin and cut the bottle gourd into about 1.5 inch pieces. Chop the onions. In a wide pan, put the oil and heat. Add the cloves and cardomom. Then add the ginger garlic paste and onions. Sautee the onions until they are golden brown in color. Add the bottle gourd pieces to this. Stir, set to medium heat and cover the pan with a lid. Stir every few minutes. After about 10 minutes, when the bottle gourd looks half cooked, get ready to add the powders to make gravy. For that, add the sesame powder and peanut powder to yoghurt and make a paste. Add this to the pan and stir. Add salt and chilli powder. Add 1 cup of water. Cover and cook, while stirring every 5 minutes or so. After about 10-15 minutes, check to see if the bottle gourd is completely cooked, if it is, then add in the coconut powder and set the heat to a medium-low setting and let it simmer until the oil oozes out. (~5-10 minutes). Turn off the heat. Garnish with fresh cut cilantro.
Serve hot with Rice/Chapathi. Serves - 4 people
