Here is one of the age-old recipe with a small tweak. My mom used to make this with a different kind of beans, which are not available here in the states. So, used black-eyed peas instead and tasted great ! My son loved it too.
Ingredients:

1 pack of Frozen Black-eyed Peas (or 2 cups raw ones. if using raw, need to soak in water for 3-4 hours)
2 Tbsp oil
1 medium sized onion (Thinly sliced)
1 tsp mustard seeds
1 tsp cumin seeds
1/2 tsp turmeric
1 Tbsp ginger + garlic paste
1 Tbsp raw urad dal
1 Sprig Curry leaves
2 green chillies
salt
For garnish :

Some Fresh cut Cilantro
Fresh Lime juice
Process:

Cook the soaked/frozen black-eyed peas.
If you use a pressure cooker, one whistle sound is enough. Drain all the water.
In a heavy bottomed pan, heat the oil, add mustard,cumin, turmeric, ginger garlic, chopped green chillies, curry leaves. Let them splatter and fry a little bit.
Then add the sliced onions, stir until the onions are not raw anymore.
Add the peas and stir. Cover and let it cook for 5-10 mins while stirring periodically. Add salt to taste. Turn off the heat.
Sprinkle some lime juice and garnish with cilantro. Your healthy and spicy black-eyed peas snack is ready. Its great for an evening snack for kids. Also, its easy to make in large quantities, so it will be a great appetizer for parties and game nights. Enjoy !
