Stir-Fried Hakka Noodles with Vegetables


Ingredients:

Hakka Noodles(Any kind of Rice noodles will work) - 200 G
Dark Soy Sauce - 2-3 Tbsp


Carrots (cut into small pieces)Cabbage (chopped)
Green Bell Peppers (diced)
Green Peas
Green chillies - 2 (sliced)
Black Pepper powder - as per spice level. (2 Tbsp = spicy hot)
Salt as per taste
Oil - 2 Tbsp
eggs - 3 (optional)
Any other vegetables you like (spring onion, broccoli, baby corn will work well too)
Process:
--------
Boil water and let the noodles sit in boiling water for 2-3 minutes until they are almost cooked.. but not completely cooked. Drain the water and set aside. In a wok, add oil and all the vegetables. Stir Fry on high setting. Add soy sauce, salt and black pepper to the veggies. After about 10 minutes, add in the noodles, stir well.

Optional : Scramble the eggs in a separate pan with some oil, add salt and black pepper powder to it and add it to the noodles. Stir well.
Serve hot. Serves - 2 adults (very generously) Enjoy !
