Okra Strir Fry Curry/Bendakaya Koora

Okra/Lady's Finger is one of those vegetables that people either really like or really hate. Personally, I like it depending on how its made. Here is one such recipes, that I think makes okra very likeable.

Ingredients:

2 lbs Fresh Okra
1 large onion

1 Tbsp Urad Dal
2-3 Tbsp Oil
2 tsp Coriander Powder
Red Chilli powder and Salt as per taste

As needed for the basic seasoning

Process:

Make sure the okra is dry. If not, wipe them with a kitchen towel/paper napkin. Cut into pieces, as you can see from the picture. Cross-sectionally, a little less than 1/2 inch in size. Chop the onion. In a pan, prepare the basic seasoning. Add the chopped onions. Saute for a few minutes. Add the okra to this and stir. Do not cover. And make sure you stir occassionally and cook on medium heat. The okra will start becoming gummy.. and sticky.. as it gets cooked. Dont worry.. it wont be so after its done. Add salt and chilli powder. The curry would be almost done when the sticky-ness is gone. Add in the coriander powder. Stir and turn off the heat.

Serves 4 people. Enjoy with Rice or Chapathi.
