Vegetarian Chili with Soy

Chili - Traditionally, as defined here is a stew made with meat and peppers. So, the "Vegetarian Chili" might sound like a paradox. But try it before you form an opinion on it and move away :) Also, this is a white chili version. I will post more chili variations as I experiment with them.
Try it , I am sure you'll love it.

Ingredients:

1 cup Great Northern Beans (you can use canned ones, I used the dry ones that come in abag)
1 cup Garbanzo Beans/Chick Peas (you can use canned ones, I used the dry ones in the bag)
1 can Chipotle Peppers in Adobo Sauce
1 can White Corn
1 cup Soy Granules (like Nutrela)
1 bunch green onions
2 Tbsp Minced Garlic
1 Tbsp Coriander Powder
1 tsp Garam Masala (optional)
Cilantro for garnish (optional)

Preparation:

If you dont use the canned beans, soak the fresh beans in water overnight. Then pressure cook them. There should atleast be 7-8 whistles. Turn off the heat. After 10-15 minutes when the pressure cooker has cooled, open and mash the beans a little bit. Dont drain any water.
Put the soy granules in a sauce pan, add 4 cups of water and let it boil for 5 minutes. Turn off the heat. Let them sit in the hot water for 10 minutes. Then, drain the water and keep the cooked soy granules aside.
Chop the green onions. And try to cut/mash the peppers.

Process:

For this amount of quantity you will need about a 5 qt size wide pan. Add some oil to it. Now, sautee the green onions, minced garlic for about 5 minutes. Then add the corn to it and the peppers. Remember, adding the whole can of peppers will make this chili spicy. So, if you like something mild, add portions of it. You can always add it later after adding the beans too as long as you let it simmer well after that. Now add the cooked beans to this. Add salt. Stir. Let this simmer on low heat for about 15 minutes. Stir frequently. Add the coriander powder, garam masala and adjust the salt as needed. Your healthy vegetarian soy white chili is ready to eat.

Garnish with fresh cut cilantro and Serve hot ! It makes a good combination with Chapathi/Bread too.

can u add some more photos step f making recipes, i want to try make boondi ladoo from your recipe, i will let u know how it turned out.

Thank you for the nice words. I plan to add photos. I will surely add them one by one...as I take more pics..you wouldn't have found this site before, because I started doing this recently. Keep watching...
