Cilantro is the essential garnish for many things made in Andhra Pradesh. Couple of nights ago, I had a lot of fresh Cilantro more than what I need to garnish about 20 curries may be and wasnt sure how could use it all up. So, thought of trying this. Guess what ? I will make it more often. It was pretty good. I will post as I try more variations of this.
Ingredients:

Lots of Cilantro (I used 2 bunches) - chopped
2 cups Rice
2 Tbsp Urad Dal
3 green chillies
2 Tbsp Oil
1 large onion (chopped)
salt
All items for basic seasoning
Process:

Cook the rice. In a large wok-style pan, add some oil and prepare the basic seasoning, add urad dal, then the onions, green chillies. Saute for a few minutes. Add the cilantro and saute for about 5-10 minutes until all the onion and cilantro is well done. Add salt. Stir. Add in the rice slowly while stirring the cilantro-rice mixture. Stir well and let it cook for about 5 minutes. Turn off the heat. Serve hot.
Goes well with Tomato Rasam. You can also sprinkle some lime juice instead of the rasam. Serves : 3 Enjoy !
